Sesame Ginger Tofu & Asparagus
What You Need
- 1/2lb Michigan Asparagus, woody ends trimmed
- 2 tbsp. sesame oil, divided
- 1 block of extra firm tofu, pressed and cut into cubes
For the Sauce
- 1/4 cup soy sauce
- 1 inch piece of ginger, grated
- 2 garlic cloves, minced
- 1/4 cup brown sugar
- 1 tbsp. cornstarch
- 1 tbsp. rice vinegar
- Pinch of red pepper flakes

What You Do
Mix the ingredients for the sauce and set aside.
In a large pan, heat one tablespoon of the sesame oil over medium heat. Add the asparagus and cook for 1-2 minutes. Then remove it from the pan.
Add the other tablespoon of sesame oil to the pan. Then add the tofu into the pan and cook for 2-3 minutes on each side or until golden brown.
Once the tofu is browned, pour the sauce into the pan. Cook until the sauce thickens, stirring occasionally.
Once the sauce has thickened, stir in the asparagus and cook for 1 more minute.
