Oven Roasted Teriyaki Pork Meatballs with Asparagus
What You Need
For Meatballs:
- 1 lb ground pork
- 1 large egg, beaten
- 1/3 cup unseasoned breadcrumbs
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp ground ginger
- 1 tsp soy sauce
- 1/2 tsp black pepper
For Sauce:
- 2/3 cup soy sauce
- 1/3 cup brown sugar
- 1 tsp ground ginger
- 1 1/4 cup water
- 2 1/2 tsp cornstarch
- 1/2 lb fresh asparagus, trimmed and cut into 1-inch pieces
- 4 cups cooked rice

What You Do
For Meatballs:
Preheat the oven to 400ºF.
For meatballs, ground pork, egg, breadcrumbs, garlic powder, onion powder, ground ginger, soy sauce, and pepper to a bowl. Mix until evenly combined.
Form meatballs into tablespoon sized portions. Place on a lined baking sheet and cook for 18 minutes or until internal temperature reaches 160°F.
While the meatballs are cooking prepare the rice according to package instructions.
In a medium rimmed skillet, heat soy sauce, sugar, and ginger. Dissolve cornstarch in the water and add to the sauce mix. Add asparagus and cooked meatballs. Gently toss to coat.
Simmer for 3 minutes on medium-low heat to allow asparagus to soften. Serve over hot cooked rice.
