Asparagus Crostini

What You Need

  • 2 tbsp olive oil

  • French Baguette, slices into 1 ½ inch slices

  • 1 cup whole milk ricotta cheese

  • 2 tbsp creamy goat cheese

  • 1 tbsp honey

  • 1/4 cup fresh basil pesto

  • 1/2 cup shaved asparagus, this can be done with a vegetable peeler

  • 1/4 cup finely crumbled feta cheese

  • Black pepper

Fresh Asparagus

What You Do

Preheat the oven broiler to low. Place bread on a parchment lined baking sheet. Brush bread with olive oil. Broil for 1-2 minutes. The bread should be brown and toasted. Remove from the oven and set aside.

In a mixing bowl, add ricotta, goat cheese, and honey together. Mix till smooth. Spread the ricotta mixture on the bread. Top each with a little pesto.

Add the shaved asparagus and finish with a light sprinkle of feta cheese. Top with fresh cracked black pepper. Serve.
