
Grilled Asparagus Caesar Salad
What You Need
For Dressing:
- 2/3 cup mayonnaise
- 2 1/2 tbsp olive oil
- 1/2 tbsp fresh lemon juice
- 1 tsp dijon mustard
- 1/2 tsp Worcestershire sauce
- 1/4 tsp salt
- 1/2 tsp black pepper
- 3 tbsp grated parmesan cheese
For Salad:
- 1 large head of romaine, washed and patted dry
- 1/2 lb fresh asparagus, trimmed
- Olive oil
- Grated parmesan cheese
- 1 tsp black pepper
- 1/2 cup crushed croutons

What You Do
For Dressing:
Whisk together all ingredients. Dressing can be made in advance and stored in the fridge.
For Salad:
To prepare the asparagus, trim the ends of the asparagus. Coat asparagus in olive oil and season with salt and pepper. Cut the head of romaine in half and brush with olive oil.
Heat a grill to medium-high heat. Place asparagus on the grill. Turn occasionally for 3-5 minutes. Place romaine on the grill after 2 minutes. Asparagus will be tender and slightly charred. Romaine will still be crisp, but edges charred.
Remove asparagus and romaine from the grill. Allow to cool a few minutes and chop asparagus into 1-inch pieces. Chop romaine and place it and the asparagus into a large salad bowl.
Toss salad with prepared dressing. Top with pepper, cheese, and crushed croutons.
