
Smooth Asparagus and Pea Soup
What You Need
- 2 tbsp olive oil
- 1 lb fresh asparagus, trimmed and cut into 1-inch pieces
- 1 1/2 cups fresh or frozen peas
- 1 clove garlic, minced
- 1/4 cup diced onion
- 1 cup heavy cream
- 2 cups vegetable or chicken broth
- 1 tsp salt
- 1 tsp black pepper

Fresh Asparagus
What You Do
In a medium soup pot, combine olive oil and asparagus and cook over medium high heat. Once asparagus is tender add the onion and the garlic. Cook for 2-3 minutes.
Add peas, broth, cream, salt, and pepper. Simmer for 10 minutes.
Using an immersion blender puree the soup. Season with additional salt and pepper if desired.
Note: The soup can be blended in a regular blender as well.
