Chunky Asparagus Guacamole
What You Need

3 large ripe avocados, halved, pitted, peeled

4 stalks asparagus, trimmed and finely chopped

1 tbsp finely chopped jalapeno pepper

⅓ cup chopped tomatoes

¼ cup finely chopped red onion

2 tbsp chopped fresh cilantro

1 tbsp fresh lime juice

1 tsp salt

½ tsp black pepper

What You Do
Mash avocado with a fork to leave some chunks in the mixture. Stir in the asparagus, jalapeno, tomatoes, onion, cilantro, and lime juice.
Season with salt and pepper. Serve with tortilla chips.
