One Pot Asparagus and Pea Orzo
What You Need
- 2 tbsp butter or olive oil
- ½ cup finely chopped onion
- 2 cloves garlic, minced
- 1 ½ cups dry orzo
- 3 ½ cups low-sodium chicken broth
- ½ lb asparagus, cut into bite sized pieces
- 2/4 cup frozen peas
- ½ cup grated parmesan cheese
- Salt and pepper

What You Do
Add butter to a large rimmed and melt over medium heat. Add the onions and cook for 2-3 minutes. Next, add the garlic and cook for an additional minute.
Pour the orzo into the skillet and stir to coat with the butter and mix in the onions and garlic. Toast for about a minute before adding the chicken broth. Cook uncovered for 9-10 minutes.
Add the asparagus and the peas. Cover, and cook for an additional 3 minutes.
Stir in the cheese and season with salt and black pepper.
