Sheet Pan Sausage, Asparagus, and Potatoes
What You Need
- 3 cups chopped russet potatoes, scrubbed and dried
- ¼ cup olive oil, divided
- 1 ½ tsp salt, divided
- 1 ½ tsp black pepper, divided
- 1 tsp dried rosemary
- 5 Mild Italian Sausages
- 1 lb fresh asparagus spears

Fresh Asparagus
What You Do
Preheat the oven to 350 degrees F.
Place potatoes in a bowl and toss with ½ the olive oil, 1 tsp salt, 1 tsp pepper, and dried rosemary. Evenly spread potatoes on a baking sheet. Place in the oven and bake for 15 minutes.
Remove the baking sheet from the oven and stir potatoes. Slide them to the middle and one side. Add the sausages and return to the oven for 15 minutes.
After 15 minutes, turn the sausages. Move the potatoes to the center and add the asparagus to the empty space. Drizzle with remaining olive oil, and season with remaining salt and pepper. Bake for an additional 5-10 minutes until the asparagus is tender.
Serve.
