Shaved Asparagus Ricotta Caesar Salad
What You Need
For dressing:
- 2/3 cup mayonnaise
- 2 1/2 tbsp olive oil
- 1/2 tbsp fresh lemon juice
- 1 tsp dijon mustard
- 1/2 tsp Worcestershire sauce
- 1/4 tsp salt
- 1/2 tsp black pepper
3 tbsp grated parmesan cheese
For salad:
- 1 large head of romaine, washed and patted dry
- 1/2 lb fresh asparagus, trimmed
- ½ cup ricotta cheese
- Grated parmesan cheese
- 1 tsp black pepper
- 1/2 cup crushed croutons

Fresh Asparagus
What You Do
Cook gnocchi according to package instructions.
While gnocchi is cooking, saute the pea pods and asparagus in olive oil in a large rimmed skillet for about 5 minutes.
In a food processor, add remaining ingredients and pulse till smooth.
Add gnocchi to the vegetables in the skillet. Add the creamy herb mixture to the skillet. Stir to evenly mix and allow the dish to heat for about 3 minutes.
Garnish with fresh basil and serve.
