
Asparagus Frittata
What You Need

1 tbsp salted butter

5 fresh asparagus pieces, trimmed and cut into bite sized pieces

3 eggs

1/4 cup heavy cream

1 sprig fresh dill, chopped

1 tbsp sliced green onion

4 cherry tomatoes, quartered

1 1/2 tbsp parmesan cheese

1/4 tsp salt

1/4 tsp black pepper

Microgreens, for garnish (optional)

Fresh Asparagus
What You Do
Preheat the oven to 375°F.
Melt butter in a 6-inch oven safe skillet. Add asparagus and cook on medium heat for 2-3 minutes.
While asparagus cooks prepare the eggs. Whisk eggs, cream, dill, salt, cheese, and pepper in a bowl. Pour egg mixture over the asparagus.
Allow the sides to set. Check by gently pulling the egg away from the side. The sides should appear cooked and start to become firm.
Top the eggs with green onion and tomatoes. Place the skillet in the oven. Bake for about 5 minutes. The center of the frittata should be set and firm.
Remove from the oven and plate while warm. Top with microgreens if desired.
