Curried Asparagus
What You Need

1 lb fresh asparagus, trimmed

2 tbsp olive oil
- 1/2 tsp salt
For Sauce:

2 tbsp ghee (or butter)

2 tbsp curry powder

1/2 tsp ground ginger

1/2 tsp garlic powder

1/2 tsp salt

1/2 tbsp flour

13.6 oz can unsweetened coconut milk

1/4 cup chopped dry roasted peanuts

Fresh Asparagus
What You Do
For sauce:
Add ghee to a small pot. Melt and add the curry, ginger, garlic, and salt. Stir till spices begin to absorb the ghee. Add flour and stir to mix the seasoning with the flour. If it gets too thick, add a tbsp of water.
Whisk in the coconut milk until curry spices are evenly mixed. Allow curry sauce to thicken over medium-low heat. Prepare asparagus as sauce thickens.
Add oil to a medium pan, add asparagus and season with salt. Cook asparagus about 2-3 minutes per side. The asparagus will be bright green and slightly browned.
Plate asparagus and top with warm curry sauce. Top with crushed peanuts (optional) and enjoy warm.
