What You Need

For Dressing:

1/3 cup avocado or olive oil

1 tbsp white wine vinegar

1 tbsp fresh grapefruit juice

1 tsp chopped rosemary

1/2 tsp black pepper
1 tsp honey -
1/2 tsp salt
For salad:

6 cups fresh spinach
-
1 avocado, pitted and sliced
-
1/2 cup cherry tomatoes, halved

1/2 lemon, cut into wedges

1/2 lb fresh asparagus
-
1 medium grapefruit, peeled and cut into wedges

What You Do
For dressing:
Whisk together all dressing ingredients to emulsify the dressing. Set aside while you prepare the remaining components of the salad.
For chicken:
Place chicken and marinade ingredients in a sealable bag. Shake to evenly coat. Allow chicken to marinate for at least 2 hours or even overnight.
