Chopped Asparagus Salad
What You Need
For the Salad
- 1/2lb Michigan Asparagus, woody ends trimmed
- 5 radishes, cut into wedges
- 1 English cucumber, chopped
- 1/2 cup red onion, chopped
- 1 cup cherry tomatoes, sliced
- 1 bell pepper, chopped
- 1/2 cup crumbled feta cheese,
- Salt and pepper to taste
For the Dressing
- 1/4 cup olive oil
- 2 tbsp. red wine vinegar
- 1 tsp. oregano
- 1 tbsp. maple syrup
- 2 tsp. Dijon mustard
- Salt and pepper to taste

Fresh Asparagus
What You Do
Bring a large pot of water to a boil, then blanch the asparagus (for about 60 secs). Then rinse with cold water. Then cut the stalks into two-inch diagonal pieces.
Place all the salad ingredients in a large bowl and mix well.
Mix the ingredients for the dressing in another bowl.
Toss the dressing with the salad and serve immediately. If making ahead, don’t add the dressing to the salad until ready to serve
