Citrus Miso Poke Bowl with Asparagus
What You Need
- 2 1/2 cups cubed fresh sushi grade ahi tuna
- 2 1/2 tbsp soy sauce
- 1 tbsp white miso
- 1 tbsp mayo
- 1/2 tsp sesame oil
- 1/2 tbsp rice wine vinegar
- 2 tsp fresh lime juice
- 1/2 tsp minced ginger
- 2 1/2 tbsp chopped green onions
- 1/4 cup finely chopped cucumber
- 3 asparagus spears, tops and stalk shaved
- 2 tsp furikake seasoning

What You Do
In a medium bowl, add the cubed ahi tuna, cucumber, shaved asparagus, asparagus tops, and green onion.
In a small bow, whisk together soy sauce, miso, oil, vinegar, lime juice and ginger. Gently stir the sauce into the ahi tuna.
Serve in bowls (optional rice), and top each serving with ½ tsp of furikake seasoning.
