Crab and Asparagus Frittata
What You Need
- 1/2 lb fresh asparagus, cut into 1 inch pieces
- 1/2 cup chopped roasted red pepper
- 2 tbsp chopped green onion
- 1 tbsp chopped fresh basil
- 6 oz lump crab meat
- 2/3 cup mozzarella cheese
- 8 large eggs, beaten
- 1/2 tsp salt
- 1/2 tsp black pepper
- 2 tbsp shredded parmesan cheese

Fresh Asparagus
What You Do
Preheat the oven to 375°F.
Lightly spray a 10-inch non-stick oven safe skillet with cooking spray. Heat over medium heat.
Add asparagus to the skillet and cook for 3-4 minutes.
Stir in the pepper, onion, basil, and crab meat. Cook for 1-2 minutes.
Spread asparagus mixture evenly in the skillet. Top with mozzarella cheese.
Season beaten eggs with salt and pepper. Pour eggs evenly over the asparagus mixture. Reduce heat to medium low.
Allow the frittata to cook for 5-6 minutes and edges to set. Sprinkle with parmesan cheese and place the skillet in the oven for about 8-9 minutes or until the center has set.
Remove from the oven, slice, and serve.
