Southern Style Asparagus and Tomato Pie
What You Need
- 1 9-inch regular frozen pie crust
- 5 roma tomatoes, sliced
- 6 stalks fresh asparagus, trimmed and chopped into bite sized pieces
- 8 fresh basil leaves, chopped
- 1/3 cup sliced green onion
- 3/4 cup mayo
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 1/4 cup shredded mozzarella
- 3/4 cup shredded cheddar cheese
- 1 1/2 tbsp grated parmesan cheese

What You Do
Preheat the oven to 350°F.
Press the tomato slices between two paper towels to remove excess moisture.
Place the tomato slices evenly into the pie crust. Top with fresh asparagus, green onion, and basil.
In a bowl, mix together the mayo, pepper, salt, mozzarella, and cheddar cheese. Evenly spread the cheese mixture over the top of the tomatoes and asparagus.
Top with parmesan cheese.
Bake, uncovered, for 40 minutes or until the top begins to turn a light golden color. Remove from the oven and let the pie rest 15-20 minutes before slicing. If the pie is sliced too soon the juices from the tomatoes will run all over. Serve.
